Sea Cookbook – food from the Fjord&Bælt Centre

Nature guide Tue Skovgaard Larsen of the Fjord&Bælt Centre and chef Jonas Bernhardt have written a cookbook with recipes based on ingredients that can be collected or caught on the beach.

In most instances, the recipes were concocted with outdoor preparation in mind, but some of the recipes are a little more advanced and require the use of a kitchen. The recipes are supplemented with stories about the animals and plants used as ingredients in the recipes, making the book a mix between a cookbook and a nature guide.

The book is illustrated by Emil Wissing and supported by Danish Lottery Funds for outdoor activities.

For example, read about cockle eyes before you make cockle soup with whisky. Or about the mating behaviour of the sea scorpion before you make crisp-fried sea scorpion with pea dip.
